Italian Meatball Stew

Ingredients

    The Meatballs:
  • 1 pound ground beef
  • 1 egg
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon basil
  • 1 teaspoon garlic (minced or crushed)
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 small onion (chopped)
  • ½ cup bread crumbs
  • ½ teaspoon salt
  • dash black pepper
  • The Sauce:

  • 1 large can crushed tomatoes
  • 1 small can tomato paste
  • 1 cup water
  • 1 teaspoon basil
  • 1 teaspoon garlic (minced or crushed)
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • dash black pepper
  • The Vegetables:

  • 2 potatoes (peeled and chunked)
  • 2 carrots (peeled and chunked)
  • ½ pound fresh green beans (cut in half)

Directions

Combine all meatball ingredients and form the meatballs by hand. Fry them until done. Boil or steam the vegetables until they are tender. Combine sauce ingredients in large pan and heat. Add the meatballs and cooked vegetables to the sauce. Serve with bread or over spaghetti noodles.
