Italian Wedding Soup


    • 3/4 lb. ground turkey
    • 3/4 lb. ground beef
    • 1 egg
    • 1/3 cup minced onion
    • 1/2 cup bread crumbs (Italian seasoned)
    • 1/2 teaspoon salt
    • pinch black pepper
    • 1/4 cup water
    • 1/2 cup grated Parmesan cheese

    • 3/4 lb. chicken
    • 3 carrots (thinly sliced)
    • 2 celery ribs (thinly sliced)
    • 5 oz. fresh spinach leaves (stems removed)
    • 1-1/3 cups orzo
    • 8 cups (or 4 15 oz. cans) chicken broth
    • 2 cups water


Cook the chicken in the 4 cups of water. While chicken is cooking, thoroughly mix all the meatball ingredients together. Form small (1") meatballs. When chicken is cooked through, remove from water and allow to cool. Add meatballs to the pot of water. While meatballs are cooking, shred or cut chicken into cubes. Add carrots, celery, and spinach to pot. Once vegetables are tender, add chicken back to pot and add orzo. Simmer until orzo is cooked.
